Mary,
That's why I usually try to do...use the sauce for two different meals. (You could use it for the lasagna or lasagna casserole, too!) :)

Adrienne, when I don't have bagels, I sometimes use two tortillas (stuffed tortilla pizza) or even toast. :) Do you have other quick meal ideas you like to use on those crazy days? :)

Anyone else want to add to the list of ideas? Another one is potato soup -- 1-2 potatoes per person, peeled and cubed, boiled in chicken broth (water plus bouillon cubes for the amount of water you added) and then mashed. Add 1 can evaporated milk and cheddar cheese to your liking. I've used frozen shredded hash browns for this, or canned potatoes (because I'm lazy!) It's also great turned into a vegetable soup -- adding carrots and broccoli. YUM!

I occasionally make bagel pizzas, they're great for a quick lunch or dinner, especially if I'm rushing to work.

These sound great, Michelle. I especially like the bagel pizza (though I may use English muffins like RoAnn did) because I love pizza, but don't need to be eating a lot of it. I could use one jar of sauce for some spaghetti and some mini-pizzas and spread them out over the week. And I love macaroni and cheese! Mmmmmm!

I tried a variation on your bagel pizzas for lunch today, using whole wheat English muffins we had on hand, left-over spaghetti sauce, and grated mozzerella & cheddar. Tasted great!
